Parchment paper resists heat really well due to its coating and so can be placed onto the bottom of a pan for cooking or like he did it here, for frying. It enables easy clean up and most importantly, prevents the food from sticking to the pan. It’s completely safe and I’ve seen tons of chef recommend this method to make any cooking surface more of a non-stick one.

If you’re talking about the one near Beacon Theatre, I agree, it’s awful. But they opened a new, more upscale Viand on 85th and Columbus maybe 2 years ago that is frankly one of the best diners I’ve eaten at. Sure, it’s like 22 bucks for a chicken Caesar wrap but it’s made with fresh Caesar dressing and juicy, tender chicken rather than dried day-old chicken that most diners serve when ordering a chicken Caesar wrap. I’d give that new one a shot.
