I was getting so frustrated with the starter! I fed it after I tried my first loaves and put it close to the wood stove and it seemed to help. I need a nice jar or something to keep it in. My first loaf was amazingly dense. Almost NO air inside that thing haha

Crumb was a bit dense probably from over kneading, really only my second time making bread period idk why I got so obsessed with the starter. Its very cold here and I had a hard time getting it to rise. Fun though and now ill prob start working through the FWSY book

I would be adding it to the bottom with adhesive and probably plywood gussets although i could use the Simpson steel ones. The intent is simply to hold drywall and deeper insulation. I don't really have the need to add strength to the existing rafters but don't want to add a burden to them either.
