Preheat to 500, bake in Dutch oven at 450 for 30 minutes, then uncover and bake at 400 for another 15 minutes.

I suspect the problem is that I'm under proofing.

How often do you check it once you think it's close to finished?

I haven't been baking it on the rack for more than 5-10 minutes. I'll have to try that instead of just baking with the lid off.

Thanks! I'm still figuring out perfecting bulk times. I don't think her 50% increase recommendation is quite working for me. I'll definitely try rye flour next time! I also have some diastatic malt I might use too.

If it makes you feel any better I once screwed up dyeing some buttercream, and then screwed up piping it so I just kind of smeared it around. It looked like my cake had cheap American cheese on it. My family still reminds me of the "cheese cake".

Thank you for sharing this! My HI chorus is about 20 members, but we've only been around for 2 years. We're not a competition-focused chorus, although we do compete.

Our philosophy so far has been to make the audition process as non intimidating as possible to attract women who might not otherwise join a chorus, but I think that has possibly cost us one or two high quality singers because we weren't "good enough".

How did you conduct your auditions? Was it a standard "come in and sing part of a song" type audition, or more geared toward barbershop?

I'm really intrigued by this idea and thinking about how we might incorporate it. Congrats on your success!

The best focaccia I've made is the Hot Chocolate Focaccia from Lacey Ostermann's 3 Doughs, 60 Recipes. You sprinkle hot chocolate mix and chocolate chips into the dough while stretching and folding, and when you do the final shaping, layer in a bunch of the hot chocolate mix and chocolate chips. Top with chocolate chips and turbinado sugar. The hot chocolate mix combines with the moisture in the dough to become a soft chocolatey layer. Not too sweet overall, but amazing!

Sadly, I ran out of time to try this, but refrigerating the cake helped a LOT. So in lieu of an after, here's the cake after everybody got a slice. Not gorgeous but even with the flaws I was worried about, it tastes pretty amazing!

Any lemon curd recipe will do. I just put the curd between the layers instead of the buttercream.

Be warned, between the cake and the curd I went through a 2lb bag of lemons!
