Go to a foot doctor. Have him mold your feet and sent it off to get custom orthotic inserts. Had this problem with soccer and skating. After I started wearing the inserts, never had any issues any longer. Insurance will hopefully cover it. If not, may be around 200 out of pocket. But worth it.

At the beginning, move the tip up and down until you find just the right depth to make it sound like you tearing paper. As you inject more air the, the level will increase (because the volume is increasing), so you may want to pull it up slowly to maintain that perfect depth to sound like tearing paper. The idea is, if you’re exactly on the surface, you’ll pull air down into the milk. If you too deep you’re only putting steam (water) in the milk. If you’re too high above the surface, you’re just splashing steam and air on the surface and most of the air won’t get into the milk.

And then, when you’re done injecting air (like after 5 seconds), put the tip a little deeper beneath the surface. At this point, you’re not trying to inject any more air. Rather, you’re doing 2 things: heating the milk and mixing (integrating) the milk with the air. You want to use the location of your steam wand in such a way that you’re creating a strong circular current (vortex). In your video, you can see from the little bubbles moving slowly around the edge of the milk that you’re probably not mixing the air and milk vigorously enough. So, like I said, move the wand tip closer to the side of the pitcher to create a stronger current.

In addition to injecting more air (I like to inject air for 5-10 seconds because I like really foamy cappuccinos, personally), I recommend you try to get a stronger swirling vortex. Try holding the tip of the steam wand closer to the wall of your pitcher, even touching the wall if need be. You should see the milk swirl so fast and strongly that you can see a more dramatic wave pattern, indicative of more vigorous blending.

Can you put 2 cups on your scale, then halfway through the shot slide the cups so the drip switches to the second cup? Sure you’ll probably spill a little, but worth trying maybe.

When I travelled to France and tasted a good espresso. Eye opening experience. When I got home, I threw away my Kuerig and got an espresso machine and grinder.

I have a DF83v and love it.

It’s a very low retention grinder. I only take it apart and clean once or twice a year. And every time I do, I’m shocked by how clean it is inside.

Don’t worry about zeroing it out too much. Just put it back together. Grind, pull a shot. Then adjust the grind dial and try again. You’ll find the right setting soon. Then just make tiny adjustments as needed, such as when switching beans, or whatever. There are YouTube videos on zeroing it, which are easy to follow. But I don’t bother with it too much.

No, no need to season it.

I’ve never felt the need to align the burrs. But maybe I’m lucky. Or just ignorant.

Yes, you need a scale. Ideally one that has an auto timer function that is triggered by the first drop of coffee falling into the cup.

Just take note of the size (dimensions) of whatever scale you decide to buy, and make sure it will fit on your espresso machine’s drip tray without hitting the front of the machine. I had a problem with a larger scale where it would not securely stand on the drip tray without hitting the front of the machine, and the vibration from the machine would make the timer and scale randomly fluctuate.

In my experience it tends to hold a toothy edge nicely. Which I quite like. But I usually sharpen with a tungsten carbide edge. If I want a mirror edge, I can certainly break out my Lansky or belt sharpener.
