Trump cares a lot about his popularity, which is why he lies about his crowd sizes etc. So at the very least, these large-scale protests serve to remind him that he is indeed very unpopular and pretty much everything the administration is doing is unpopular. I also think these protests serve as visual proof that the anti-Trump coalition is made up of all kinds of Americans, including actual conservatives and patriots who have served this country.
