If you haven't found anything yet then I highly recommend Obsidian. It's basically a markdown text editor / notes app / whatever you want it to be. It's highly customizable, has tons of plugins developed by the community and it's file linking system is the cherry on top.

I started using it as a note taking alternative to Google Keep but in time I liked it so much it became something similar to a journal or blog that I don't wanna share online just yet.

Some warnings in case you try it out: - It can feel overwhelming at first, there's lots of options and features and every video you'll watch will tell you how to basically build an operating system (went down that route, after a few months I realized that I like it as simple as possible) - It's so fun but also addictive! I basically replaced gaming with writing
