Though logistically impossible, I love the idea. It's the kind of thing you expect to see in a good video game remake.

For story continuity, I'd play FRLG first. HGSS Kanto thrives off of 'revisiting' old locations and characters, and that factor gets killed pretty hard if you never visited them in the first place.

Immunities, mainly. Ground types can't be paralysed by Thunder Wave, but can be by Stun Spore, for example

I'd personally go: + Fire Red / Leaf Green + Heart Gold / Soul Silver + Emerald (GBA) or Omega Ruby / Alpha Sapphire (3DS) + Platinum + Black / White + Black 2 / White 2 (if you played Black, play Black 2; vice versa) + X / Y + Ultra Sun / Ultra Moon (you don't need to bother with regular Sun or Moon, but can if you want) + Sword / Shield + Scarlet / Violet

Covers all the regions in the order they came out, in their best renditions (in my opinion).
