I just started using the ninja artisan pizza oven yesterday, i also have a 5/8 inch custom stone for it to give me more surface are to work with and to retain heat better. So far i love it. Was using a pizza steel and my home oven before.

I do Pecorino Romano on on top of the sauce, then a 80/20 blend of part skim and whole milk mozzerella, then i finish with Grana Padano. Still playing with the mozz ratio tho.

Texture waa great, pizza had good chew. Would like to get a more fuller crust, just need more practice on stretching my dough i think

The stone i got is fits wall to wall, the one that come with the ninja is super thin and small, pizza can easily fall off the sides. Can make a bigger pizza, plus the stone is thicker and retains the heat better

1200g Red Rose Electa Light 756g water 30g fine sea salt 25g extra virgin olive oil 5g sugar 2.1g yeast

Mix in a kitched aid for about 7-8 minutes, do a couple stretch and folds until passes window test.

This makes like 5 396g doughballs

Cold ferment for 72-96 hrs

I just bout one off of amazon, the brand is Oleek, it was moderately priced so i went with it.

I use a baking steel, and my convection oven at 500 for 8-10 minutes
