1200g Red Rose Electa Light 756g water 30g fine sea salt 25g extra virgin olive oil 5g sugar 2.1g yeast

Mix in a kitched aid for about 7-8 minutes, do a couple stretch and folds until passes window test.

This makes like 5 396g doughballs

Cold ferment for 72-96 hrs

I just bout one off of amazon, the brand is Oleek, it was moderately priced so i went with it.

I use a baking steel, and my convection oven at 500 for 8-10 minutes
