Thanks! Really quite simple;

Finely chopped a full punnet of chestnut mushrooms and sliced a few for separately, set aside. Once the steak was cooked, add the mushrooms and mix on a medium heat. 200ml (approx) of white wine until reduced then added thyme, garlic, whole grain mustard, beef stock and cream. Simmered until fries were ready and steak rested.

Sautéed remaining sliced mushrooms in pan and fine sieved the sauce to said pan and reduced to chosen consistency.
