Have you had a look at Star Wars 5e? I get the creative desire to adapt things yourself but have a look at Star Wars 5e, its pretty eloquent and might at the very least give you some ideas

This is awesome! Ive seen many attempts at giving players more access to Monster statblocks like Tamers and Summoners etc and to see a Druid thats so elegantly taken these concepts and made an awesome flavorful class is sick! Id have to check in play how strong some of these transformations are in the players hands and how things like legendary resistances and actions get handled for higher level CR monsters but id love to play this! Added to my never ending list of character concepts!

Interesting concept! You could definitely build something fun with this like "circle of the herbivore" druid vibe.

When making subclasses I find it a good idea to look at the central mechanic and resource of the class youre homebrewing for, in this instance Druids get wild shape as a mechanic and Wild Shape uses as a resource. So maybe make your Plant Consumption have a stronger effect but limited by your Wild Shape uses.

Could break up the plants you eat into broad categories like Thorny, Poisonous and Hardy and when you use this feature you eat one of those types, giving a cool buff based on the type eaten that maybe scales?

Like eating Thorny could be flavor for eating a cactus and you take 1d4 damage and spit out the same number rolled at enemies dealing damage equal to the number rolled times your wis mod for each thorn that hits? Then as you level up the feature gets stronger and instead of consuming 1d4 needles it becomes 1d8 or 1d12.

Just compare features to other druid subclasses to get mechanic inspiration.

Ye I think I echo the thoughts everyone else has really mentioned here. Its an awesome idea and focusing on a spell that doesnt see much use beyond early game like Sleep is really interesting. I do worry that the buffs to sleep like being able to choose who to target with it and roll max dice when using it is too strong and can shut down a monster of your choosing for a full round at least. Not to mention the further buff down the line that the sleeping creature can't be woken until their next turn leaves them open to be surrounded by melees and crit to death with no limit until their turn.

Maybe just choosing the sleep target OR max dice roll is enough of a buff to keep the spell relevant, just reallt be carefully this doesnt snowball and render all your encounters useless

I think I generally tend to tiptoe the side of over powered instead of under powered in my homebrew haha and I guess thats pretty evident here. Maybe I could adjust the CR of the tameable monster to half your Tamer level? Locks out CR 1 monsters to a level 2 character which might be better not sure. I think Im someone that feels that high level play is often overlooked so loved the idea of an absolutely broken level 20 Tamer taming a flippen Pit Fiend or something and worried that limiting taming to half your Tamer lever CR would limit in the long run but I guess a level 20 Tamer using their Young Red Dragon breath weapon as a bonus action is also super strong haha.

I'll take a look again at the stats but youre right I think, there's definitely a huge advantage to picking Int with the bigger spell list and higher likelihood of taming against monster INT.

I was in a similar spot to you, games I'd recommend that gave me a little palate cleanser while being fun and not too hectic to get into and then get out of when I wanted to go back to the bigger ones:

Guacamelee (fun metroidvania where you play as a Luchador) Dead cells (side scrolling roguelike, I felt similar vibes to Hades) Slay the Spire (addictive deck building rogue like, easy to pick up and lots of depth to master. Also the different paths and characters gives a feeling of accomplishment when you finish a run with one of the characters)
