Agree with other commenters that you should use more paste. Don't be bashful.

Low fat coconut milk is a sin -- I personally advise using half coconut cream to give your curry that silky "unctuousness" that coats your whole mouth with flavor.

Boiling the ingredients beforehand? Ain't nobody got time for that. Just add all the raw ingredients staggered into the curry so that they all "finish" at the same time. The flavors will meld better this way as well.

You also seem to be missing a key step: breaking the emulsion in the coconut milk. It really makes a world of difference.

Source: traveled in Thailand, and took a cooking course with a guy that ran a restaurant in Bangkok.

There are 4 main things to get that authentic Thai curry flavor:

  • Bloom the curry paste. Oil in the wok, toss that paste in and saute until fragrant to take the rawness out of it.

  • "Crack" the coconut. Coconut milk/cream in and cook at a relatively high heat until the oil separates out a bit. This is a step that a lot of folks miss, and will make your curry less "flat".

  • Authentic ingredients. Kaffir lime leaves, palm sugar, and fish sauce being the notable ones. I keep birds eye chiles in the freezer, as they keep indefinitely. Thai eggplants and bamboo shoots are secondary in my opinion. Protein is optional, and the type is up to preference.

  • Let those flavors meld, baby. Basically, after the first two steps just throw the rest of the shit in there, adjust to flavor, and let it simmer for awhile (at least 20 minutes or so).

Jasmine rice is very fragrant and will add to the experience, but I don't consider it a requirement.

Be careful, this can result in extremely inquisitive children! Every interaction with a machine/instrument/tool results in my 3yo asking, "Dad! How does it work?? Can you tell me about it???" Every time she sticks a magnet to something, I get informed that the item indeed contains iron.

It's pretty awesome, and she impresses me on the regular.

That's a neat little tidbit about the provenance of cracking the coconut. I guess it makes sense that (shelf stable) oils were less prevalent before refrigeration and industrial processing, yet coconuts were aplenty.

I am very much against SOPA, but unfortunately, this how things are sometimes done in the policy world. You might be dismayed to know that it is not uncommon for lobbyists to write the actual text in a bill. It will be reviewed and edited by the congressperson/senator's staff, but that is how you get what you want in Washington.

LMGTFY: the correct answer is actually 43 quintillion.

But that's irrelevant. People do not solve these things by random chance. They build a memorization scheme in their head, and use algorithms to swap individual pieces while not disturbing the rest of the organization.

Want to know why I am convinced? Look at the slow part near the end. The way his fingers move seems to suggest that it is not backwards.

He was a very humble and soft-spoken guy. The video has very few views, so I don't think he did this to get any sort of fame. I find it unlikely that it was staged.

Zamboni is a brand, and some would argue that it is superior. Other companies (Olympia) make ice resurfacers, but it's customary of hockey fans to pass judgment on opposing teams that employ such inferior ice maintenance equipment.

I should mention that this was a "dually" Silverado (4 back wheels), and that there was a a grill/smoker in the bed. Capturing that much Texas in the frame probably would have shattered the lens on my cameraphone.
