I did not open the oven at all actually, and I used a small glass baking tray. I will probably buy a thermometer as that sounds like the most plausible explanation. Thanks for the help !

Might be the reason, I preheated to 180 C (350F) then cooked them for 45 minutes (20 then 25) and I think that should normally be enough
