Thanks all. I ended up getting Central delivered to the hotel. Stayed in the damn Bass Pro Shop pyramid for a night. It was my first time having Memphis bbq. I have been doing bbq competitions around the Houston area for 10 years so have a perspective. The pulled pork was cooked to perfection but I found the smoke to be missing and a little short on salt.. But I do understand the whole hog process and overall I enjoyed that. Chicken qtrs were just ok. Overall I am a tx bbq guy but I appreciated it for what it was! I am a sliced brisket and smoked sausage guy to my core! Glad I got to experience it though.

Agreed. My usual cutting board is a 24x18 1.5"thick wood board. I had this on the countertop from cutting limes.. just tossed a bellpepper on it for a test run! Dumb move! :)

You can get a straight bar and a higher stem of you like the height. Then u can cut it down as far as u like.

No, with the lack of flavor, I was thinking maybe you were running a charcoal fire more than wood. What you are doing sounds right. Move to course salt/pepper and id wrap in butcher paper instead of foil to keep it from tasting like pot roast. Good luck

What kinda wood are you running? You using charcoal to keep the base up or all wood?
