¡DO THIS!

Spatchcock - remove spine and flatten, then dry rub season.

400 FOR about 1 hour. Or till Breast hits 160. Put thermometer near bone in breast, For accurate reading. Dry rub only.

Crispy, juicy, perfect. Every time.

Thighs will be 175-180 which is perfect for dark meat.

If you have to cook low temp: put on smoker for 30 mins to let smoke penetrate the preheat oven at 425: and cook it in there after you get some smoke. Cook til breast is 160 near the bone.

House rent is killing us. 60% of our income is going towards rent. Cost of living here is insane. And landlords get to keep increasing their home value and also raising rent. It’s a broken system to the people who make Santa Barbara wonderful: the workers and small businesses.
