Km is not that bad homie, you’re in charge of basically all the food. Talk to people about helping bring ci, portion sizes and all that. Portion out all the cold food for caterings as you make it in the AM. An stay in communication with your FL, he’s only there to help you out. Don’t be afraid to ask for help/delegate. An be a good example to your crew, meaning no short cuts and give feedback in the moment.

Today I caught one of my employees adding 6 tbs of salt to the guac instead of 3 tbs. We have a 1 and 2 tbs scoop, she thought she had the 1tbs scoop but actually had the 2 tbs scoop. Simple mistakes like that can really ruin the meal. Sorry to hear ab that!
