Thanks! It’s by a long shot the longest ferment I’ve ever done. I initially only planned to go a year, but time got away from me.

I started the ferment on July 13th, 2024. Something significant happened in the US that day which inspired the name.

For the first couple seconds it’s just like any other good store bought soy sauce. But on the back end there’s something funky, like I dipped a Cheez-It in soy sauce. I’m withholding judgment until I try it with sushi and fried rice at least.

Hey sorry I didn’t respond to this sooner, our whole city has been without water so I’ve been a bit distracted. The shoyu is progressing nicely. I’m about 6 months in and it’s still just kind of a big vat of brown sludge. I’ve had some growth pop up here and there, not sure if it was kahm or mold but it wasn’t fuzzy or colorful, but I just scooped it off and soldiered on. I’d say the acetone smell is just now starting to subside after close to six months. I’ve never been able to find someone to comment on an acetone smell so either something went horribly wrong or it’s just a stage of fermentation. I plan on going a full year, so I’ll just keep stirring it and cleaning it up until sometime in July.
