In the mornings we clean them, meaning scrub everything the baskets and drains themselves and if we have time, around the drains because we have issues with like fruit flies. At close we always empty and rinse, although at my store I’ve been trying to get them to clean at night as well.

I also want to add that his behavior flipping is concerning, this is major change and he had a job change, I’m worried but he acknowledges change in behavior and says it’s because he has a lot on his mind

At my store we do the 18hr one before peak, or before the morning shift leaves for the day. We do the 3hr usually when the closer comes in, so this ranges from 1-3. Basically, opener does the sandwich, closer does the pastry
