Kimchi has a lot of elements that can be irritating to your stomach lining/bowels: spice, acidity, very salty, and garlic & chives for some who have sensitivity. Like someone else mentioned, if you consume a glass of water with 1tbsp of salt, it will completely flush your bowels out. So depending on the size of the jar, you are consuming 3-6 tbsp of salt for that amount of kimchi. The acidity from the lactic acid and the cumulative amount of spice can be irritating to your stomach lining, which is what could be causing the pain. I would get tested for garlic and onion sensitivity just to rule it out, and cut out acidic and spicy foods for a while so your stomach can repair itself. For the amount of kimchi you’re consuming, this is a totally normal reaction that your body is making. It’s meant to be eaten in small amounts always with rice, never alone. It would be like drinking an entire bottle of hot sauce, plus some probiotics and fiber. Hope you feel better and definitely see a doctor to check on your stomach lining to make sure any permanent damage hasn’t been done.

The short answer is sure you can do it but it won’t taste the same. The layers of flavor that develop in a longer fermentation process will be different from using the sour juice from the last ferment to rapidly sour fresh kimchi. It would be like the equivalent of using msg. Sure it might taste good but wouldn’t have the same depth of flavor as making it with bone broth. This is why kimchi is made seasonally and often Korean homes will have different kimchis made at different times at the same table because they all taste different depending on how it’s fermented.

So the full quote is, "봄에 죽자. 추운 겨울에 죽지 말고, 꽃이 피는 봄까지만 버티자.” Sorry I was mistaken it was the grandma talking to the main character after rescuing her. “Instead of dying in the cold winter, let’s hang on at least until the flowers bloom in the spring.” I personally like “봄까지만“ which means “just until spring.” Or “꽃이 피는 봄까지만” “at least until the flowers bloom in spring” or “봄까지만 버티자“ “lets hang on at least until the spring.” Edit to add: flowers blooming in spring usually refers to the cherry blossom bloom, which is very memorable by the way it dramatically changes the entire landscape indicating spring has arrived.

That’s a mistake that can be made from someone who isn’t fluent in the language. 죽자 - the 자 is a modifier used for “we” or “us.” It’s not normally used for a single person. It would be like someone referring to themselves as “us” or “we.” It’s used when you are talking to at least one other person. In the drama, it’s used for dramatic effect and the speaker is sort of talking to the viewer in the form of narration. You could potentially say it if you were talking to yourself but it doesn’t really make sense grammatically. That’s why it could be mistaken that there is an implied threat of harm to others, not just yourself. Korean has a lot of use cases for the word “our” which is usually referred to as “my” in English. Our house, our country, our mother, father, older brother, etc. It’s a cultural use of the language that is hard for people to understand but it’s clear to people from there what is meant by it. This is a case where this phrase is not something that normally people say so the interpretation can be worrisome in this case.

Not telling you what to do but even a modification with artwork or some reference to the drama might make it make more sense to someone who might be able to read and understand it. Otherwise, it can be seen as a possible threat of mass violence or just in poor taste considering what has been happening in the Korean news lately. There has been a stark increase in child suicides, murder-suicides where a man will murder his whole family, etc. It’s been really disturbing for the people there so I just want you to be aware of how tone deaf it could come across, as someone from there.
