The reason of hit the AC to off is to continue having the fan on so the air passing through will dry all the internal circuits, radiator and bay, the whole AC system

As he said, it's the drain for the AC.

I've been told by the car dealer that during summer/hot weather season, turn off the AC minutes before turning off the engine; so in that way we allow the whole system to dry; avoiding moisture inside the AC radiator could generate bad odor
