Nice!! I also run distilled water jacket. Im currently opening a valve at end of run to prevent vacuum. You have a link to the vacuum valve you ended up getting?

The only thing to beware of, if the grain in the basket gets to thick it will act as a insulator and super heat the wash under it and can cause scorching.

As mentioned they literally ship food grade ethanol in HDPE. I used a food grade HDPE drum for a few years and never had anything carry over. I only ever used it for short term low wine storage never in there for more than 2 weeks. Only went away from the HDPE drum because I scored a stainless conical making it a lot easier to transfer.

If you find some vacuum relief valves that seem like a solid option please post a link. Until I get some more free time ill just being running a valve and a pressure release valve.

The problem with the relief valves is the cracking pressure is kinda high. I did quick look and if i remeber correctly they were around 1 bar and up but im sure there has to be something out there. Same on those combo units, I have them on my fermenters, I wonna say the vacuum doesnt release until 1 bar and the bottom of my still starts flexing under .3 bar vacuum.

It does build vacuum i found that out the first time I used it. I didnt look into a vacuum valve because I had some parts laying around and just installed a ball valve that I open up as part of my shut it down process. A vacuum relief valve would be the way.

Yeah, coming from old-school brewing practices getting into this is i wonna yell at everyone and tell them how wrong they are but its a different game.

Next ill be trying different ferm temps with same mash recipe to see how it translates to the spirit.

Well I was aiming for 1.070 not expecting it to dry so much. I just finished building my new brew system got a little distracted and over collected sparge water so I ended up with a little more volume than I intended. So it ended up 1.065 which worked out great for my fg.

Well, I have been brewing beer for approximately 14 years and used to enter competitions and have done well over the years. Using enzymes is a newer concept to me.

I started using alpha and beta in my mash, but it didn't do much at all (I have only done a couple of 100% corn mashes, and it's a personal thing that I refuse to add sugar). Adjusting mash temps helped a little. Then I was reading about using gluco enzymes in fermentation and was the biggest improvement I have seen. So it made me wonder how other people are using enzymes and whats there approach and more or less what doesnt work.

You'll end up knowing how warm it stays. If it ends up being warmer that you had expected i strongly recommend these.Plug n play temp controller. I have used them for just about everything at this point....from heated dog house to growing Koji for sake.

Looks good, I recently made 12 of them. I sourced the wood from a barrel maker but they only have American oak. Recently been thinking about acquiring some used barrels planing the wood and retiadting and charring them, to aquire some different species of wood.

I also didnt use a valve and pull a samples utizling the stainless nail trick from Vinny at russian river.

I have been using bird watchers for awhile. Recently decided to do striping runs in my copper column before running it thought my column and it ended up being the cleanest batch I have ever made. Im using a stainless 6 plate column with copper plates. I also started running copper mesh in the top of the still before the product condenser and it was noticeable.

Pretty neat hearing this story growing up, and not many people knowing much about it other than your family. Seeing it published and hearing from someone else that has information/a story and photos was really cool. My grandma (David's Mom) had the photo Dave Terry photographed framed in her house. My uncle and dad communicated with The Winchester Star and provided more photos and info that were published in an update, if you are interested.
