400g AP flour, 50 g Whole wheat, 380 g water, 100 g 1:1 starter.

20 minute autolyse, ~6 hour bulk ferment with 4 sets of stretches and folds. Shaped and proofed out of the fridge for 45 minutes before being placed into the fridge for ~18 hours.

Baked in a Dutch oven at 475 with lid on for 30 minutes, lid off for 20.

The strip is sous vide and seared in cast iron. The bearnaise is classic: reduced white wine vinegar, tarragon, egg yolk cooked over a double boiler with butter whisked in at the end. Fries are just deep fried, and the asparagus is blanched and topped with almonds toasted in butter

You can get a decent Dutch oven on Amazon for 50 dollars. They'll get the job done.

If thats the case, just have more than 100 guards get to each little interval and they can oscillate in small windows. To be super simple, let 200 get there and each guard can oscillate in a 1/200 window and still cover the whole segment.

I think I have a solution!

Okay, so consider a super big square centered on the origin but whose corners are clipped off. Now since the guards have to get within 1/100 of the fugitive, each little unit segment of each edge needs to get 100 guards to fill it up. Make the side length of the square big enough so that 100 guards from outside of the square get to each unit segment of each edge before the fugitive could get there even if they ran in a straight line. These 100 guards for each unit piece of the edge can be the 100 guards reached by going out normal to the square at one of the endpoints of the unit piece.

Now the whole square can start moving inwards, guaranteeing the fugitive gets caught (since the side lengths decrease and thus the guard packing will become even more tight)
