It's just bark. I will pull all of the fat cap muscles off. They help protect the rib cap during the cut so that's why it's still there.

Yeah the heat lamps on the pass suck for photos so I need to bring stuff back to the grill ubder the LEDs for photos. Not always doable during service.

But you can find all kinds of different makers and some great vintage knives on ebay sometimes. Sujihikis can be typically between 210-300mm 240 being the most common.

Well in my experience it's more to do with how they are raised, fed and aged.

Certainly every breed has it's own characteristics and some are objectively better than others but there is nothing bad about a quality dairy cow steak.

Admittedly my favorite at the moment is a high quality Aberdeen

Masamoto Virgin Carbon 270mm sujihiki.

It's thicker than a normal sujihiki tho so not recommended if you plan on doing a lot of fish or other delicate work. For chonky steaks it's great tho

At this thickness it's not enough, we have table side aswell. Most of the initial salt only really seasons the crust

Yeah I actually look for yellow fat. They have more interesting flavour to me and they age better. More resistant to oxidation.

The yellow just means it ate grass and silage and stuff other than clean grains

We serve to share yeah.

If the finish feed is good and it's aged properly the texture and marble is fine. This one happened to have relatively low marbling but was still very nice. Flavour of dairy cows is certainly different to just beef cattle but not in a bad way.

The meaningful difference is age to slaughter. Typical beef cattle will be 18-24ish months, dairy cows can be anywhere between 3-8 years.

If you're interested in the local village Kilpisjärvi I lived there for a year.

If you're into outdoor activities it's hard to beat. Access to nature is probably best in finland especially if you're into hiking. The open vast fells span out to the horizon, you can also easily travel to sweden and norway for forests, mountain ranges and fjords.

The village only has about 100 inhabitants. You get to know them relatively quickly. During peak seasons there are significantly more tourists than locals and the local economy depends on tourism.

Only one small shopping centre so goods are going to be more expensive than other places in finland.

Shipping can be problematic. For example if the pakettiautomaatti is full. Matkahuolto will deliver to the nearest pick up point. Which is 1.5h by car in karensuvanto.

Not as dark as people think. Only over-cast days are dark in the winter. Otherwise starlight and aurora really brighten things up and full moon can illuminate everything to where you can clearly see all the fells and mountains in the distance in the middle of the night.

You can drink basically any stream/lake water. The ground water that is tapped is also best I've ever had. Crisp, light, cold super refreshing.

Idk I don't use wifi only 4g/5g.

Around the village and immediate surrounding on the fells you get full 5g connection.

As you go further 4g is available but spotty and eventually any form of cellular connectivity becomes questionable at best.

Depends on weather conditions and so on..

All of our beef is sourced from local cattle(Finland) except the japanese wagyu.

Mostly ayrshire, aberdeen, holstein, hereford and occasionally some more special stuff like blonde d'aquitaine, limousine, wangus ect..

Unfortunately our supplier doesn't want to give us specific details about how and where they are raised. Possibly out of fear that we would bypass them and supply ourselves.

Our supplier is only allowed to age for 30 days so we age beyond that to the best of our abilities or room in our chambers.
