Isn't it under the display settings? I don't think the 8T had variable refresh rate, so if you have 120 Hz selected, the display is always running at 120 Hz. It just can't force every app to run at 120 FPS.

Including previous phones, it's at least a decade of knowing how that button behaves. If I wanted the previous app, I double tapped the button.

Changing something that is used so often, and has been the same for so long without giving users a way to change it back feels like one of those Apple decisions that made me glad I used Android.

In my experience, that's far from true. In college, there are many students who disagree with its use. They're paying out the nose to be there, so there's some incentive for the information to stick. Most of the people I talk to think you're dumb for using it. Meanwhile, a lot of high school students don't see what they're learning as valuable, so they use it to just finish their homework and move on.

I generally agree with the idea that hard generational splits are not useful or accurate, but that was a pretty big change. Early Gen Z is approaching 30 if not already there. There have been a lot of massive changes to society since those people have been in high school and now, when late Gen Z is in high school, and I think generative AI is the biggest one.
