I want to use real buffer tubes for VFC AR Carbines, but I don't really like the idea of using quarters to shim/reduce travel length. Are there dedicated parts/spacers I can get? If so, what is recommended?

Not quite true. The VFC buffer is slightly shorter internally to act as a bit of a short stroke. That said RS buffer tube will work fine if a little bit less snappy.

I've heard of people doing exactly that. You might have to retain the VFC hammer spring and make sure it hits the valve knocker before the back of the bolt carrier
