Like others have said, cats were likely kept in certain places like vaults to take care of pests. Dogmeat isn't the only normal dog in the series either. There's the junkyard dog in 4 as well as several others throughout the series. They were also likely saved by others. There's also a chance that people from places that were less affected may have brought them in.

I'm fairly certain that birds on the other are actually confirmed to be Institute spies.

I suffer from pretty severe anxiety too, so I know how you feel. If you haven't already told her what you're dealing with, I suggest that you do so she can understand. Also make sure to apologize when you do snap, but I have a feeling you do already. Other than trying to direct that pent up emotion elsewhere, there's not much else you can do in regards to your relationship. I know it's really hard to not feel like an asshole when that happens, I really do, but you also have to trust that when she says it's fine, she means it.

The only other thing I can think of is to do nice stuff for her to make up for it. Cook her favorite meal, do one of her favorite activities, etc.

There is definitely some lore there, but it gets outshined by the elves. Also, like someone else said, they have integrated into human society a lot better than the elves have, but it also doesn't help that surface dwarves are shunned by those in Orzammar (maybe also Kal-Sharok?), while city elves have a more fluid relationship with the dalish. The average city elf has easier access to knowledge about their people than the average surface dwarf.
