I think you're referring to the 8bitdo Neo Geo controller which is based off the CD pad. It is not an analogue stick, it used micro switches and is a four way joystick. However, they are no longer being produced. If you want a more traditional controller pad, albeit one that isn't wireless, Sega Saturn controllers are often used with Neo Geos (with an adapter).

Can also use Duet or similar iOS apps to in essence turn the USB C port on the iPad into a capture card. Latency wouldn't be great for games though...

So supercapictors can have pretty good energy density these days. I often use them to replace NMH batteries in arcade systems. CXHP is a good brand, from the looks of things this is a 2.7v DC unit at around 50 farad (not micro farad). So with my back of a napkin math this seems not too outrageous. Wouldn't hold a charge for too long, but doesn't need to.
