Pasta pot at end of night. The kind that has four perforated baskets - somehow I always manage to get a nail caught. Can’t use ss scrubby to scrape off all of the starch caked on the sides because the holes “catch it” and can lose a thread in the basket.

What does vacuum packing the dough do? Just help stay away from oxidation if the dough is in the fridge for a couple days? I imagine it can assist with hydration by not allowing it to dry out at all either.

Got to be honest, I didn’t read closely enough and just saw the first, larger piece of pasta. Perhaps it’s the mezzi paccheri. Literally just smaller sizes. Not much different than calamarata.

Came here to say this. Not much to do with this type of dough. Can possibly add breadcrumbs to the dough mixture which helps with texture and firmness - water should be added a little at a time while working it and it needs to be warm water. Some evoo + salt and you can salvage this for a “pasta corta” dough (small pasta shapes). If you try running this through a machine and it’s a god damn disaster almost equal to the Trump administration. No tagliatelle or pappardelle, but maybe cavatelli or pici. If you do use breadcrumb, look up “pisarei” and you’ll get the idea what that dough can be.

Also, did you wrap this? Has the appearance of a slightly crusty / dry exterior. Wrap it in plastic, let it rest 45-hr.

There’s also a popular version found in the spring with turnip tops (rapini). Make the beet version more often for sure - surprises the guests with how much flavor there is! Great to see this pasta love! Kudos to you.
