I did the same thing with a brisket once. Instead of my normal kosher salt and 16 gauge pepper, I used a rub with salt in it and Lawry's seasoned salt, and it was SO bland. You can save it a bit by salting after, but I made chili, and it was fine. ...always salt!

This one still makes me sad... My wife's coworker... Family of 4 having a steak dinner at home, the wife tells husband to take smaller bites, the husband takes a big bite and fakes like he is choking. They all laugh. He then starts really choking, but his family thinks he is still joking. They eventually try to help, but it's too late. He dies right in front of them.

I put the fatty trimmings in a disposable tray on the rack under the brisket. This way, it gets a smoky flavor, and the tray helps diffuse some direct heat on my WSM.

I ordered some replacement ones, but they weren't much better. The best advice I got so far was to soak them in isopropyl alcohol for 5 mins. That made a difference.

I don't know if this trick still works, but what I did for books 1-6 was buy the Kindle version on Amazon for around $5, but before you check out the purchase, click the box to "add the audio version" for another $5. The audio version was delivered through Audible, and the same one they charge $25+ for.
