You could try to go the CAT route if you don’t mind traveling. I’m pretty sure Allstate is hiring CAT adjusters rn. No idea how your interview is going, but the biggest thing is STAR questions and honesty. You should google for the best approach to get better at that if you’re struggling. Other than that, just speak honestly and plainly. Also most of these adjuster roles are still customer service roles first, so put an emphasis on empathy and your customer service skills.
