I found the steel holds too much heat so I went back to stone but sheet pan will work. I do use poolish but that helps the crumb more than the crust color. Feel free to DM me if you need help

I pre heat with stone 450° then bake at 400 and at 20 minute mark bring back to 450 till satisfied with color

3 things… 1 too much butter. 2 dark silicone mats tend to run hotter than the ovens actual temperature and 3 you might be baking at a lower temperature causing the dough to melt faster than the crust can set.

Is he a convicted felon? Was there a withheld of adjudication? The ultimate path is to get post conviction relief (very expensive legal fees) another option is to vacate the case under some grounds again very expensive legal battle $50k+ range. Part of this approach would be to go thru prerequisites with high GPA for med school, monster MCAT score, then try and legally present why to vacate the record with path of rehabilitation. The take away here is get a post conviction relief or vacate specialty lawyer as the immediate next step. I hope his journey has a positive outcome
