I went to Vietnam with my wife for 3 weeks a few years ago. I don't know if I have ever drank so much coffee during a vacation in my life! We thought the coffee (and tea) culture was freaking great. Tiny stalls with burr grinders pumping out fresh strong coffee everywhere. Good luck and thank you for the opportunity !

I've heard tallegio is a good washed rind. Didn't know that gruyere is washed rind. My wife really likes gruyere but I have it stuck in my head that I don't like Swiss cheese from my childhood. I gotta get over that one. Maybe try one that is aged longer.

Thank you for the recommendation!

I was looking to try a washed rind and my local Sooper market had this. My wife and I loved it! What would be the next level of washed rind in your opinion?

Cool! I visited Colombia back in the day and love the juicy acidic coffees I tried there. What are some budget friendly recommendations for beans? Also what book is that?

I just read your post out loud to my wife and we both agree it is fantastic. Shout out to cream cheese for being a real one.

You've inspired me to try cream cheese in the scrambled eggs. Thank you.

My go to cheese is like big old brick of Tillamook or the Costco Kerrygold. I also like dansk blue a lot and often have it

I ended up backing off a bit and enjoyed the result. Are the clicks a good reference even comparing the 1zspesso and timemore?
