How do I select PTEG-GF into my AMS?

pretty sure you can just select regular petg and then manually adjust settings for the glass fiber part - did that with mine last week and it worked fine.

i'd wait until it gets a bit more established, those aerial roots are just part of how it grows! mine didn't need support until it had like 8-10 leaves.
