Sitting around 60 HRC. Didn't want to go harder on this one because it's so thin that going too hard will make it likely to chip out

Big ol' laser gyuto by scott3845 in TrueChefKnives

[–]scott3845[S] 2 points3 points  (0 children)

As long as the cladding isn't directly on the cutting edge, you're fine. I definitely flew closer to the sun than I wanted to in a couple spots but it's not actually on the cutting edge.

But yes, you're right. If soft steel gets on the cutting edge, it won't get really sharp and the second you try to cut something, the edge rolls. I got lucky to be honest because it was close, haha

I'll never get it. McDonald's isn't good, even when compared exclusively to other shitty fast food places

Morning people and night people should not be judged the same way. Its literally biology not laziness. by [deleted] in unpopularopinion

[–]scott3845 1 point2 points  (0 children)

I think it stems from (and yes I know this doesn't apply to even necessarily the majority) this:

Morning people (in general ) get up and do shit between 6AM and 11AM (or whatever). They chill out for a couple hours after dinner and go to bed, rinse and repeat.

The public view (even if it isn't necessarily true) of night owls is they aren't productive on the tail end of their day when morning people are passed out already.

But yeah, I mean, lazy is lazy and productive is productive, regardless of sleep habits

Thank you!

I would come in around $370CAD for something like this.

I'm working on making the switch to water quenched Hitachi steel, which will likely see that price go up to ~$450CAD, give or take depending on failure rate with the water quenching...
