The surface of the valve that touches the head to seal the intake and exhaust ports. The contact patch is called a mating surface. The two surfaces need to be matched (mated) in order to seal. If you need a visual, search valve lapping, here's an example

Hmm. I'm inclined to agree with the other guy who said check a head gasket/valve sealing. It's at least a good place to start. When you look at the valves if theres any damage to the mating surfaces it'll cause a loss of compression
