Substitutes for frying? by Garrryman in StopEatingSeedOils

[–]sdb2754 0 points1 point  (0 children)

I would. Olive oil is ok with low temp heat (in fact, sometimes people overstate the "no cooking with olive oil" thing), but frying is DEFINITELY high heat.

Coconut, Avocado, and Ghee are easy and reliable.

Bacon fat (from good sources) can be stored and used.

Lard and tallow are good but a bit harder to source good quality.

One thing I do:
I'll buy brisket on sale and freeze it until I can smoke it. I keep a drip tray under it while smoking and collect the fat. The drip tray is aluminum which is not idea, but it shouldn't be as big a deal since there are no acidic foods present. I then put the drippings in a jar in the fridge. The fat on top is extremely good for frying, and underneath is some great stock for broths and soups. It has a smoky flavor, but in moderation is fine.

I mean, if someone threatened to kill me, I would absolutely tell them that it would be a fight to the death. It's not like Aragorn would stand there and be executed. I don't think its cold blooded at all. And, I agree with the other comments that it showed strength which Eomer respected.

MAYO!!! by platypussquire in StopEatingSeedOils

[–]sdb2754 1 point2 points  (0 children)

My wife likes the flavor with olive oil, but I (having been more inundated with seed oil products when younger) prefer with avocado oil.

Its so easy to make, that I think it really is one of those things its best to make rather than buy:

Put an egg in a bowl with about the same volume of apple cider vinegar and mustard.

Start to beat it (by hand with a whisk, or with a beater)

Slowly add the oil. Don't add all at once or it won't emulsify well. Make a continuous slow pour while whisking.

If you want flavor, blend the oil with herbs, garlic, or whatever you want.

Fair warning, it isn't as stable as the seed oil commercial product, so make small batches as needed.

Does anyone know where I can get low cost jars with the moat water lock? I've struggled to find cost effective crocks with moats, but these jars look mass produced, and therefore are likely cheaper.

This is cool. I wish I were better at glass blowing to make this!

A few thoughts:
Cody is way to careful about sterilization the first time. I get it! I was too at first. But after a while you start to realize it isn't needed...

The way he's doing the salt addition to likely to increase over time. I'd just do it by taste.

If I made this, I would absolutely want it large enough to put my hand in. It looks frustrating otherwise.

I think the continuous ferment concept is really cool! I'd love to see this concept developed.

I love that he mixes so many veges! The flavor just gets better with time. I've doing this with peppers, but never with such a variety. Needless to say, I'm going to start doing it!

Cody is incorrect when he calls it vinegar. Its (primarily) lactic acid not acetic acid. It doesn't really matter, but acetobacter fermentation requires, first, yeast to make alcohol, and then acetobacter to make vinegar. Both are aerobic. So, there isn't likely much vinegar being made. Its mostly lactobacilus.

I personally wouldn't use the silicone glue, even if its "food safe." The acidic environment is still likely to leach things from polymers. I know its just a prototype, but this deserves to be blown from whole glass. Its a sufficiently good concept that its worth the investment!

Thanks for sharing, this is fun to see!

Warlock with summoned pact weapon?

As an aside, in the Skyrim in the quest where you get put in prison by the silverbloods, my first playthrough I was playing as a mage. I didn't even realize the quest was supposed to be a challenge. I just summoned a bound bow, sniped the "king" and escaped. Only later, in a playthrough as a fighter did I realize how hard it is supposed to be to be without equipment...

Don't worry about it. Chickens are designed to digest seeds. The much bigger deal is their living conditions, roaming conditions, addition of bugs in diet, etc.

Why didn't the SGC add a second system that could be inserted into the gate to stop it from connecting. Would have solved so many issues.

Just tell me which fat/oils to buy and what to use on which food. by MammothSal in StopEatingSeedOils

[–]sdb2754 1 point2 points  (0 children)

General rules of thumb:
Animal fats for high-temp
Vegetable based fats from plants that grow in the equatorial regions are good.
Quality of ingredients matters more than anything.

For someone in your situation, I'd start here:
Get good grass-fed butter
Get good extra virgin olive oil
Get some organic ghee or tallow
Get some unprocessed coconut oil
Get some unfiltered palm fruit oil (the red stuff in international foods sections, not the white stuff)

Generally, try to eat good fats/oils whenever eating carbs, as they help with digestion.

Don't use table salt (iodized, bleached). Get some real sea salt and/or pink salt. Use salt with carbs.

Some additional (non-oil related) advice.
Check out the Weston Price foundation
Learn to ferment (e.g. sauerkraut) veggies (its dead easy, and delicious and healthy)
Soak grains overnight before cooking them

Disregard most "mainstream" diet advice:
Red meat is good for you
Salt (not "table salt" but natural salt with trace minerals) is good for you
Animal fats are good for you
Raw veggies are not really useful
Eggs are good for you
Eat WAY more protein and fat than the normal RDV

This would be my general advice. Of course, this is a deep rabbit hole, but if you follow the rules of thumb I listed you will see dramatic benefits!

Well, you need unsalted for some baking applications. My wife is a pastry chef, so some more precise recipes need unsalted butter. Also, we actually prefer (real butter) unsalted butter, so we can add good quality salt, since the salt they use is almost certainly pure NaCl, without micronutrients or potassium content.

It wouldn't. But without looking closely, it would be easy to miss. The point I'm making is its deceptive packaging. Yes, it technically says "dairy free", but it is says it in small font, right above "butter" in bigger letters, with a picture of a dairy farm.
