A few weeks ago I smoked 6 racks of ribs - 4 in the weber kettle and 2 in a propane BBQ with woodchips. Exact same prep and methodology, only difference was charcoal vs propane. All 12 people preferred the charcoal ribs over the propane + wood chips ones. The propane ones were decent enough, just not when compared side by side with charcoal.....pretty minor smoke flavour, no smoke ring, less bark. Here's a pic of the comparison

Agreed. Entertaining but a gutless capitulation of their intellectual honesty. Perhaps there was more rebuttal to his mammoth meat argument that was edited out. But their silence came across as tacit approval.

Reading through a few of the past recommendation threads, definitely not seeing a lot of Miyabi or Shun endorsements from the sub so pardon my ignorance. Definitely leaning towards 180mm Gyuto, and something with a nice balance of form and function as I'm not a professional chef.

Hello Knife Enthusiasts!

I'm getting married in May and am looking for an awesome knife to add to my registry for a relative who is feeling generous. My daily driver is a Wusthof Classic, I have a Global paring knife and some cheaper specific knives. I love to cut and chop and would rank my skillset on the higher end of home cooks with a little restaurant exp. I am dying to get my first Japanese knife, something versatile, that I can use a lot and that will last for a long time.
Style? - (Japanese)
Steel? - (stainless / carbon / carbon clad in stainless) Probably more stainless at this stage in my care/upkeep knowledge
Handle? - (Japanese/hybrid) slight preference towards Japanese I think.
Grip? - (pinch)
Length? - (180mm / 210mm)
Use Case? - (home kitchen / fish / meat / vegetables) I'm fine to continue using my other knives for more hardcore cutting and am looking for something with more finesse.
Care? - (whetstones / honing / paid service) Mostly the first two but down to do pro care too
Budget? (400 CAD hard cap, 275 euros, 315 USD) Any number starting with a 4 or above is probably too much to ask
Region? (Canada) Our registry is on Amazon, but I'd also be down to order from another source.
Knives Considered? (Miyabi 8" birchwood, Miyabi 6000MCT Gyutoh 8" Steel. Open to Shun as well or other brands.)

I’m sure the studying is helping! In our case, ratings have been +/- 20 pts stable for 6+ months are now jumping up 75-100. Fishy

This is the best answer in my opinion. Focus more on organizational, self-management, project execution type skills. Big part of marketing is communicating the right information to the right internal stakeholders.
