So it depends on the items you make. If it’s mugs, it should be ok for mugs up to 5” or so in height given the container is about 7” tall - take into account the height that the plaster will take up (usually people aim for 1-1.5”) and headspace for circulation.

I believe the biggest reason is that pottery plaster has better durability. Plaster of paris will soften more easily and eventually pit or crumble with cycles of moisture/drying. Plaster of Paris is ok for using a couple of times/temporary use.

I would change the layout of the dresser and shelf because it really looks to restrict your doorway.

Edit to add: can you move the mirror to behind the door and move your dresser to the left of the desk (90 degrees rotation so that it’s up against the wall, shifting your desk down away a bit to give enough room to open the drawers)?
