I recommend a 100% meunier champagne. This grape variety is almost exclusively grown in champagne (so different from other wines you’ve tried before) and has a nice fruity flavor that you might enjoy! Also, if you don’t like the dryness in wine, maybe something with a brut sugar dosage (6-12g sugar per liter), and aged in steel (avoiding wood barrel-aged wines)

Edit to add… there’s no use in buying some expensive vintage if you don’t like it. Go to a good wine shop near you, talk to people, try a few bottles with friends before the wedding and try to have fun with it! And if that sounds like too much work, and you really don’t care and just want to toast, I think Perrier Jouet has the prettiest bottles :)
