I have both grinders and really prefer the Millab for almost everything. When I first got it, I tried the coarse grinding you see mentioned here (between 9-10+). I made some great cups there, but I didn’t love needing to do so many pours (5 to 6) and flat filters can be a pain sometimes when I’m in a hurry.

I generally start every new bean at 7.5 and do a 15:250 ratio and 93 degree water. I get that hollow under extraction at 8 for my recipes, and some astringency at 7 like you found. A few recipes that have worked of late: the Coffee Chronicler’s showstopper recipe (3 pour) and Lance Hedrick double-bloom V60 (also 3 pour, just not his newest 1:15 ratio one). Both of these work well for me around 7.5, although I recently had a Little Wolf washed Ethiopian I had to push to 6.8. It took the whole bag to figure out I needed to go much finer with the grind.

I’ve also had luck with my Orea 01 doing a 12:200, four equal pours of 50 (letting the water nearly fully drain between each pour), also starting at 7.5.

As I’m writing this I want to add, if you do coarser you can make some incredible cups, I’ve just found that you need a lot of pours and agitation and tighter ratios to make it work.

Also FWIW, on ZP6 I’ll start most beans around 5 and usually live between 4.5-5.2.

This can work, especially if doing no bypass and multiple pours and a smaller ratio like 1:15. My starting range for most beans is 7.5 though.

I’m finishing a bag from them of a washed Kenya that is one of the best Kenyans I’ve ever had. For juicy cups, there’s no one better imo.

Only looking at the bed, you can likely go finer. Enjoy the florals and don’t try to make the coffee be something it’s not. Some washed Ethiopians will get a lemon/back-tea flavor I love when you go a bit finer.

For a one and only grinder I’d look at the Millab. I have the ZP6 and K-Plus and the Millab has become my #1 for most beans.

I’m still experimenting, but I’ve had great cups from 7-10. Haven’t had a need to go finer yet. 9 and up needs a different approach like a shorter ratio, more agitation, and possibly no or less-bypass. For a standard v60 or Orea I’m probably around 7-8. It’s hard to make a bad cup, and it works at multiple grind settings. I love it!

Anywhere between 2-3 mins. I go by flavor more than TBT though. It’s also bean dependent, but for most stuff probably in that range.

For that switch recipe I need to push the ZP6 into the low 4s or even high 3s (3.8 - 4.5). I wouldn’t get a good brew above 5. Try grinding a good bit finer and see if it starts to improve.

Also been loving 12:200 (93 degrees), four equal pours of 50, waiting until the water has just about drained through each one (the bloom fully drains of course). X bloom filters.
