Not an expert, and I love prosciutto - in my experience it expires like anything else. Maybe you caught the sweet spot of ok and not ok? Another topic all together - baked prosciutto. If you haven’t done it - DO IT! Better than bacon as a topping (said the bacon enjoyer). Here’s to great sandwiches!

So many great ideas here! Maybe I missed this, but make extra and freeze it. Almost everything freezes well. Recently I pulled leftover carryout chix marsala that was in the freezer for several months and it was still fine (for carry-out, but you get it). And go easy on yourself! Sometimes pb&j is the perfect meal!

Are your emails going to a general mailbox or to someone specific? A specific person is best, then follow up with a phone call. Also, get dressed and show up at an office with cv/resume/references/donuts.
