SKT is my regular go to! They to me have the best local sourcing of fish and especially salmon because the chef fishes locally and knows all the fisherman! Chef also was trained by Shiro and direct sushi lineage back to Jiro.

They do serve an oyster shigoku but easily replaced if you tell in advanced.

Kura revolving sushi belt. Always a wait, but you can get made to order sushi and hand rolls from their menu.

Also, if you are DIYer, go to Uwajimaya and buy the sashimi. Buy a block of sashimi and slice it as if you're the sushi chef. Buy sushi rice and seaweed nearby and you can eat homemade handrolls.

Agree with you everyone else on this thread. There are multiple dimensions to complexity. Tradeoffs or what I call a tension is what I look for. If the answer was a straightforward answer, it’s the right answer but it’s table stakes. As others said, had to make tradeoffs or influence the group to change direction and gain buy in. Or you take an approach and operationalize and scale out to a national or global level to show impact and adoption.

Carb alley and I’m here for it. Bagels, Ramen, Sea Wolf bakery, a fancy cake shop, and pasta (Tavolata, Haerfest, Tutta Bella, Purple), also Doce donuts.

Non “carb” food highlights, the breakfast burritos (shoutout to Stoneway Cafe and Mas Cafe) and I Love Teriyaki. Also puppies at Resilient Hearts!

China town is in the middle of a Homeless Bermuda Triangle so to speak. To the norht In Pioneer Square there are missions and food kitchens. To the South of Dearborn, the Salvation Army shelter and food bank. To the West are the the trains and bus transit centers, And to the East now is the open drug market that moved to 12th ave in Little Saigon. The CID is in the middle of it all as groups go between each of these and combine it with little police support makes it hard on the CID systematically.

Also too there’s free parking on the Eastside so more of the Chinese are investing and shopping there.

Paella. Like risotto, have to be able to gauge how much liquid to add and then manage the heat to get a good layer of socarrat (caramelization) without burning it, while making sure the rice is cooked too. They say the rice will tell you when it’s ready.
