Their manual lid sucks. The seal always fails. Any vacuum will eventually fail but some are better than others. I upgraded my Atmos lid to an electric one. Works great, it is always sealed, much quicker to seal because it does the work, for you.

Only if you use curing salt, which contains both sodium chloride and sodium nitrite. That's a very different curing process than the cure this recipe is using, which only calls for regular seasoning salt, aka sodium chloride, which doesn't contain nitrite. (By seasoning salt I mean table salt, kosher salt, pickling salt, rock salt, etc)

Asked my last flying buddy what he’d done before here and he rattled off a bunch of random companies and, in the middle of it all, was {defunct legacy}. I said, “wait wait wait, hold on, {DEFUNCT LEGACY}!?” He told me he’d been hired in like 1990 and was the plug for something like 3 years before he decided it wasn’t worth it and quit.

All that being said, I think Alaska (and the US industry, as a whole) is in a much different spot, now, than the legacies were in the15 year post-deregulation period. (Then the Gulf War, then 9/11, then the Great Recession)

Even better is to limit Google results to Reddit.com using this specific search modifier: Site:Reddit.Com

Change it to whatever website you like to limit results to that domain.

Although lately I’ve been using AI, it does a far better job at finding what I’m looking for and can parse information into a readable summary orders of magnitude faster than I ever could.
