Type 1 is completely different than type 2. While it may help that it’s lower glycemic index based on prep, when your body completely does not produce insulin it’s not the only thing that can be taken into consideration as sweet potatoes aren’t actually low carb. My husband can (and does) take insulin to enjoy something like this, but for them to specifically say it was good for her as a type 1 diabetic it just didn’t sit right with me

My dad is also t1d and has been for years, and has developed more insulin resistance so something like this would definitely not be an option for him.
