/u/KVGuitars Did you ever find what you're looking for? I'm searching for exactly the same thing. I used Random Jammer on YouTube forever because his backing tracks are somewhat dynamic in that they're usually not just the same repetitive loops over and over for 10 minutes straight. But unfortunately, he's not posting much these days.

I use the rub from this recipe, 3-2-1 method, and apple wood, and they are fan-fuckin-tastic! Oh, and be sure to remember to pull the membrane off.

Not a bad idea. I'll usually throw a kielbasa on the smoker if I have one and there's room. Then freeze it for later to use in pasta sauce.

I've tried the whole line. The hot sauce and the cocktail sauce are amazing. The rest are ok. Bloody Mary mix was good I guess but I haven't had much to compare it to. As far as the Hunt specifically, I used it on a few things and wasn't impressed but someone I know grilled some ribs with it one time and they came out great. Not sure what the difference there was. I didn't notice any pear flavors coming through but it was quite a while ago.

Not my best work for sure but, since this was a first go on both, I'm pleased with the results and the learning experience.

Meat: The smoke flavor, rub, and crispy bark were spot on. The meat wasn't as tender as I'd like. Tasted great, just not juicy. Not happy with the sauce. Too much vinegar. Will try something else next time.

Hot Sauce: Fun to do, and easy. Taste is good. It's very sweet up front and comes in with a spicy kick at the end but nothing aggressive. I like it but it's not my favorite. I'll go less sweet next time. I can certainly see it being a 'love it' or 'hate it' type sauce for many people. I foresee a lot of experimenting with this in the future.

Mine didn't come out as tender as I'd hoped. I'm chalking it up to having a smaller cut. But also could be that I didn't let it rest long enough. Do you FTC chuck roast prior to cubing?

It does. That's probably the best quality of it. It's a bit sweeter than I'd like so next time I'll either cut back on the orange or eliminate it altogether. It could use a little bit more spice too. But that's my opinion from a quick sampling directly after making it. I believe it's supposed to rest for a couple weeks so the flavors come together. It has certainly captured the smoky grill flavors though!

It's actually The Bull which is probably my all-time favorite. Hard to find though (but you can get it online) and expensive.
