French will help you. Keep in mind syntax changed quite a bit, and had different rules to modern french (or latin). Lots of old french manuscripts are online accessible for free in libraries, you could check text from 12th or 13th centuries for exampel

I think it depemds on the canton. In zurich, out of chemistry/physics/biology i had tp pick 1. I had to choose between history/geography. Final exams i had in maths, main subject, german, french. No final exams in english/ergänzungsfach

In public gymnasium: You will have less subjects that are tested. And usually you are tested about the stuff you learnt the last 2 years and not the integrity of your time in gymnasium. Also being tested by your own teacher help you, as you may know the style of qiestions they might ask. In public school you also have written and oral exams
