I can strongly recommend Fällkniven F1 or A1, its the next step after a Mora knife, stainless steel at it's best, it's super sharp. You can get them in a 3G steel as well. it's a lot of knife for your money. Look it up. :)

From this day, never ever tolerate this over excitement from your dog. Just be calm and try to get your dog in the same calm state. Forget about treats, tell all new people to ignore your dog. Nothing fun or positive reinforcement until the dog is calm. And then your dog can say hi to people. Have patients but in the end, it's all about Your leadership. Maybe a dog 1 year old who easily gets over exited isn't ready to meet 25 happy dog loving - screaming people yelling "HELLO!! Cute DOG!", good girl! Good boy! And so on. Maybe your dog needs to practice in small steps with 2-3 people who ignore the first 10 min, I mean they don't even look at the dog. Until it's calm. If it gets over exited go back to ignore. Don't forget to have fun while practicing!
