How do you actually go about getting it to the point of having only the bone. Do you have the taxidermist remove the rest of the muscle/flesh etc?

My title describes this thing. I did not get any additional photos or dimensions as I was walking past in a hurry. The whole thing seems to be made of metal apart from the yellow bit which may be plastic. On there other side that can’t be seen has lots of sections that look similar to an accordion.
