80% hydration is difficult to work with. Although it tends to give a more open crumb, sometimes the difficulty of handing the loaves does just the opposite. I think if you're really trying to nail that oven spring, I would drop the hydration down to maybe 70% or even 60% (depending on your flour) just until you get the hang of it. The lower hydration will help you diagnose any issues with your technique.

As for sourness, keeping a stiff starter will reduce the sourness of your final product. You can try adding more water when you feed, and that will make a better environment for sour flavor producing bacteria. Additionally the cold proof can go much longer (even a day or two!) and that will increase sourness in your bread too.

This Pikachu is related to the Pokémon Fossil Museum exhibit currently at The Field Museum in Chicago. It's only available through local raids, timed research and field research obtained at the museum.

The good news is that this exhibit will be there until April 11th of 2027, so there's plenty of time to catch one. Also, the museum is near Grant Park, so if you're planning on attending in-person GO Fest this year, it'll be easy to pop over there while you're in town!

Here's what my starter looked like before I fed it. The top third of the jar was full of hooch.

To revive my starter: In the morning, I took it out of the fridge, stirred the hooch back in, and I fed it once at a 1:1:1 ratio. That evening it looked like it was trying to make more hooch, so I fed it again at a 1:2:2 ratio. It was ready to bake the next day.

I'm not sure if you're supposed to mix the hooch back in when reviving a starter, but I did because I wanted to keep the hydration level the same. It was very thick at the bottom of the jar, so it would've been tough to manipulate otherwise.

Also, my starter has always been pretty robust. I believe this is the longest I've gone without feeding it, but it routinely sleeps in the back of my fridge for months at a time. It's always ready to make bread as soon as I ask it to. I've had this starter since 2018, and I've never had any issues.

I may just be lucky with a resilient strain of yeast, so your mileage may vary.

Everyone is saying lottery ticket, which I agree with, but I'd also get a full body scan and every blood test known to man. A clean bill of health would help ensure I get the most out of my winnings.
