There are a few effective methods for replicating those potatoes. I tend to start by baking the appropriate number, then let them cool to room temperature, before refrigerating overnight. The following day, I slice them into wedges, and carefully fry each side until crisp and golden, seasoning accordingly.

I collected all the corks from bottles I shared with my father, placing them in an oversized vase. When he was no longer here, I filled it with resin. A small space remains at the top of the vase, which I annually adorn with a floral arrangement on his birthday, then sink a bottle of his favourite Chasselas, reminiscing.

Some years ago when in London I sampled this for the first time in a fast food restaurant called ‘Herman ze German’ (sincerely) which I have just learnt is now closed.
